Ingredients:
1) 1 cup walnuts
2) 1 cup whole wheat flour
3) 1 cup all-purpose flour
4) 1 Tbsp baking soda
5) 1/2 cup coconut sugar
6) 1 tsp cinnamon
7) 1/4 tsp nutmeg
8) 1/4 tsp pumpkin pie spice
9) 1/4 tsp fresh minced ginger
10) 1/2 tsp salt
11) 5 tbsp butter
12) 3/4 cup pumpkin puree
13) 1/4 cup milk
Glaze:
1) 1/2 cup powdered sugar
2) 1/4 tsp cinnamon
3) 1/4 tsp nutmeg
Instructions:
1) Preheat oven to 425 F
2) Toast walnuts for 2-3 minutes then chop into small pieces
3) Mix together all the dry ingredients: flour, baking soda, cinnamon, nutmeg, ginger, and salt
4) Cut butter into small pieces and fold into dry ingredients
5) Mix in pumpkin and milk
6) Mix in 1/2 of the chopped walnuts
7) Use your hands to form into a dough- It might feel dry, just keep mixing with your hands until it is all formed together
8) Flatten dough into round circle of about 1-inch think
9) Cut into 8 even slices and place on a baking sheet covered in parchment paper
10)Bake for 15 minutes or until golden brown
11) While scones are baking make a glaze
12) Once scones are baked evenly spread glaze on each scone and sprinkle with the rest of the walnuts
