Walnut Pumpkin Scones

Ingredients
- 1 cup walnuts
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 tbsp baking soda
- 1/2 cup coconut sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp pumpkin pie spice
- 1/4 tsp fresh minced ginger
- 1/2 tsp salt
- 5 tbsp butter
- 3/4 cup pumpkin puree
- 1/4 cup milk
Glaze:
- 1/2 cup powdered sugar
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
Instructions
- Preheat oven to 425 F
- Toast walnuts for 2-3 minutes then chop into small pieces
- Mix together all the dry ingredients: flour, baking soda, cinnamon, nutmeg, ginger and salt
- Cut butter into small pieces and fold into dry ingredients
- Mix in pumpkin and milk
- Mix in 1/2 of the chopped walnuts
- Use your hands to form into a dough- It might feel dry, just keep mixing with your hands until it is all formed together
- Flatten dough into round circle about 1 inch think
- Cut into 8 even slices and place on a baking sheet covered in parchment paper
- Bake for 15 minutes or until golden brown
- While scones are baking make glaze
- Once scones are baked evenly spread glaze on each scone and sprinkle with the rest of the walnuts
