Sweet Potato Crust Quiche

Ingredients
- 1 large Sweet potato
- 2 tsp Avocado oil
- 2 cups Spinach
- 2 cups Kale
- 1/2 cup Unsweetened almond milk
- 2 Eggs
- 1 tsp Black pepper
- 1/4 tsp Salt
- 1/4 tsp Crushed red pepper
- 1 cup Mozzarella or feta cheese
Instructions
- Preheat oven to 350 F
- Grease pie pan with avocado oil
- Thinly slice sweet potato and evenly lay on bottom of pie pan, covering the bottom & sides
- Brush a little more olive oil on top of sweet potatoes, bake for 20 minutes, then take out of oven
- Sautee spinach and kale in a pan for 3-4 minutes to cook it down, then place on top of sweet potato crust
- Mix together the milk, eggs, and seasonings then pour mixture into pie pan on top of the spinach & kale
- Top with cheese of choice
- Bake for 35-40 minutes
