Sweet Potato Crust Quiche

Ingredients

  • 1 large Sweet potato
  • 2 tsp Avocado oil
  • 2 cups Spinach
  • 2 cups Kale
  • 1/2 cup Unsweetened almond milk
  • 2 Eggs
  • 1 tsp Black pepper
  • 1/4 tsp Salt
  • 1/4 tsp Crushed red pepper
  • 1 cup Mozzarella or feta cheese

Instructions

  • Preheat oven to 350 F
  • Grease pie pan with avocado oil
  • Thinly slice sweet potato and evenly lay on bottom of pie pan, covering the bottom & sides
  • Brush a little more olive oil on top of sweet potatoes, bake for 20 minutes, then take out of oven
  • Sautee spinach and kale in a pan for 3-4 minutes to cook it down, then place on top of sweet potato crust
  • Mix together the milk, eggs, and seasonings then pour mixture into pie pan on top of the spinach & kale
  • Top with cheese of choice
  • Bake for 35-40 minutes
  • Slice and Enjoy! 🙂
