Walnut Pumpkin Scones

Ingredients

  • 1 cup walnuts
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 tbsp baking soda
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp fresh minced ginger
  • 1/2 tsp salt
  • 5 tbsp butter
  • 3/4 cup pumpkin puree
  • 1/4 cup milk

Glaze:

  • 1/2 cup powdered sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  • Preheat oven to 425 F
  • Toast walnuts for 2-3 minutes then chop into small pieces
  • Mix together all the dry ingredients: flour, baking soda, cinnamon, nutmeg, ginger and salt
  • Cut butter into small pieces and fold into dry ingredients
  • Mix in pumpkin and milk
  • Mix in 1/2 of the chopped walnuts
  • Use your hands to form into a dough- It might feel dry, just keep mixing with your hands until it is all formed together
  • Flatten dough into round circle about 1 inch think
  • Cut into 8 even slices and place on a baking sheet covered in parchment paper
  • Bake for 15 minutes or until golden brown
  • While scones are baking make glaze
  • Once scones are baked evenly spread glaze on each scone and sprinkle with the rest of the walnuts
