Mini Peanut Butter Muffins

Ingredients

  • 1 scoop vanilla protein powder
  • 1 cup powdered peanut butter
  • 1/2 cup almond flour
  • 3/4 tsp baking soda
  • 1 tbsp coconut oil
  • 1 cup unsweetened almond milk
  • 1 whole egg
  • 2 tbsp all natural chunky peanut butter
  • 1 whole banana

Instructions

  • Preheat oven to 350 degrees F
  • Mix together protein powder, powdered peanut butter, almond flour, and baking soda
  • Melt coconut oil then mix together with egg, and almond milk
  • Add two mixtures together
  • Mix in peanut butter
  • Smash up banana and mix into mixture
  • Grease mini muffin pan with avocado oil
  • Evenly distribute mixture into muffin pan, makes about 30 mini muffins
  • Bake for 8-10 minutes
  • Remove from muffin pan & Enjoy!
