Blueberry Crisp

Ingredients

Bottom Layer:

  • 1-1/2 cups blueberries
  • 1 tbsp coconut sugar
  • 1/2 tbsp lemon juice

Top Layer:

  • 1 cup oats
  • 1/4 cup almond flour
  • 1/4 cup melted coconut oil
  • 1 tbsp coconut sugar
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 350 F
  • Grease a 8x8 glass baking dish with coconut oil
  • Mix together blueberries, coconut sugar and lemon juice. Pour into bottom of pan
  • Melt coconut oil
  • Mix together coconut oil, coconut sugar, pure vanilla extract, and cinnamon
  • Pour mixture on top of blueberry mixture
  • Bake at 350 for 40-45 minutes
  • Broil for 2-3 minutes to get the top golden brown
  • **I topped mine with some vanilla Halo Top!
